Quick Stir Fry Broccoli With Ginger And Garlic

I've given this recipe an Asian twist to it by adding ginger and sesame seeds and some sesame seed oil. But you can just pan fry it with just garlic and onions and it tastes just as great. I threw in a few dried Kashmiri chillies for a slight kick as they are not known for their heat.

Ingredients:
Broccoli separated into smaller florets
fresh garlic chopped fine
fresh ginger chopped fine
3-4 dried red chillies (I used Kashmiri red chillies)
1/2 tsp of toasted sesame seeds
1 tsp of sesame seed oil
sea salt to taste
fresh pepper

Method:
Heat oil in a wok, add in the chopped ginger, garlic and red chillies. Once slightly golden, add in the broccoli and season with salt and pepper. Cook on a high heat so that the vegetable caramelizes a bit. I always prefer to add sea salt as opposed to table salt for sautéed vegetables as it helps bring out their flavor. I usually reserve table salt for my indian cooking. Season with salt and pepper. When almost done, drizzle with sesame seed oil and sprinkle over the toasted sesame seeds.

To toast sesame seeds, simply dry roast on a low fire without oil till they turn a nice golden colour. Watch them constantly as you do not want them to burn.
