SUPER SIMPLE MINT SAUCE/MARINADE

Super Simple Homemade Mint Sauce




Ingredients:
2 bunches of mint
1/2 tsp of sugar
salt and pepper to taste
3 tbsp. of vinegar
1 clove of garlic
3 tbsps. of olive oil


Method:
Chop 2 bunches of fresh mint (just leaves) very finely. Place in a small bowl. Add boiling water to just cover the mint (roughly half a cup) and soak for about 10 mins. Drain out water. To do this I pressed the mint with the back of a spoon slowly draining out the water. Add half a teaspoon of sugar, salt and pepper to taste, about 3 tbsp of vinegar and one clove of garlic (crushed to a fine paste by mixing in a bit of salt). Finally drizzle with a bit of olive oil about 3 tbsp. You could use this as a marinade or a sauce. It stores nicely in an air tight glass jar in the fridge.
