Spinach With Rissoni Pasta

This dish is nothing short of heavenly. Light to the palate and refreshing are a few words I can use to describe it. An excellent side dish to any meat or fish.

Spinach With Rissoni Pasta


Ingredients:
Risoni pasta (rice shaped pasta)
1 bunch of spinach leaves
4 cloves of garlic chopped fine
Salt and pepper to taste
1 lemon
Olive oil
Parmesan cheese to garnish

Method:
Boil the rissoni pasta like you would normal pasta. Follow the instructions at the back for the timings. Drain and set aside.

Wash the spinach and chop roughly.. not too small.. In a saucepan, saute the garlic in olive oil, add the spinach and give it a quick stir fry. Season with salt and pepper. Add the risoni pasta.

Zest the skin of one lemon. Then chop the lemon in half and add the juice of half the lemon to the spinach pasta. Add the zest and its ready to serve.

Serve warm with a sprinkling of grated parmesan cheese. Enjoy!
