Onion and Bell Pepper Relish


Dinner for 2, some days back: smoked herring with chopped onion and red peppercorns, fried eggplant slices with herbs..., sweet potato pan fried with crushed garlic and chilli, avocado and tomato salad and slow cooked onion and red bell peppers tossed in sugar and vinegar. . Along with a nice glass of wine. ..


Will post the recipe for the onion and bell pepper relish/topping below. It was absolutely delicious and made up at the spur of the moment!... The sugar and the vinegar together balanced out perfectly for a sweet picklish relish..

Onion and Bell Pepper Relish


Onion and Red bell pepper relish/topping:

Ingredients:
1/2 large white (salad) onion sliced thickly
1 red bell pepper sliced in strips
2 tsps of sugar
2 tbsps. of apple cider vinegar
Pinch of salt and pepper to taste

Method:
In a saucepan, heat some oil. Add the onions and sauté on a low to medium heat. You do not want the onions to caramelize but just be a nice golden colour with some crunch/bite still in them. Add the peppers after a couple of minutes, keeping an eye on it, so it doesn't burn. Add all the rest of the ingredients and check for seasoning.

Would be a great topping for a burger, or on some grilled fish, or with prawns, or even on some crostini as a starter! You could use this recipe as a base, and add other ingredients to it, like mushrooms or even a variety of different coloured bell peppers for more colour..
