Buy your own blocks of cheese.. Grate them with a microplane grater or in a food processor and store in the freezer (labelled) in small Ziploc packets. When you want to use them, use them straight from the freezer. No need to defrost. They break up surprisingly well..

Especially works good for parmesan cheese. The ready made parmesan ones are very powdery and not nice at all. Other ready grated cheeses like mozzarella etc, have a chemical in them to stop them sticking to each other, so don't melt as nicely especially if you want to use it for pizza, lasagna etc..
