When cooking any kind of mince, be it beef or chicken etc, when you add your mince to already sautéing onions and veggies in the pot, quickly toss the mince around and break it up till it starts to change colour.
If you leave it sitting there in the pot, even for a few minutes without doing the above, it can start to get lumpy, and form into balls, and it will be hard to then break it up and get a nice even texture to your dish.
