Oven Roasted Peppers Poached In Olive Oil

This is a really quick easy dish to make. You can use it for a variety of dishes.. It will go lovely in any sandwich. You can use it in salads, pizzas, couscous, or just serve it over some bruschetta (crisp baguette bread) as a starter.

Cooking the peppers renders out their sweetness and they just taste delicious. I've used mixed colored peppers for this dish.

Some recipes call dry roasting the peppers, removing the charred skin and then cooking them in olive oil. I didn't have any issue with the skin being on, as its not tough to eat.

Ingredients:
6 mixed coloured peppers (capsicums)
1/4 cup of olive oil
salt
pepper

Method:
Preheat the oven to 350f.

Cut the peppers in half to remove the inner seeds. Then cut into 1" thick strips. Place in a 1" deep oven dish. Add in the olive oil and give it a good toss up. Season with salt and pepper.

Place in the center of the oven and cook for 1 hour.

Do not throw out any extra olive oil. Collect it and keep in a small container. You can use it to flavor your omelette for breakfast the next day or to add to any dish to give it that extra depth of flavor.
